В данной статье рассмотрены основные микробиологические причины образования дефектов рыбных консервов и пути минимизации рисков их возникновения при производстве рыбного паштета. /In this article discusses the main microbiological reasons for the formation of defects in canned fish and ways to decrease the risks of their occurrence in the production of fish paste.
