Annotation

In laboratory studies, the influence of the pH of the medium on the activity of catalase in dormant and germinated grains of various varieties of malting barley was studied.It was revealed that the highest activity of catalase in all studied varieties of barley was observed at pH 7.0 and 8.0 that can be used to assess the ability of brewing grain to malt.
